Wäßriger Rückstand der Milch nach Abscheidung des Kaseins u. des Milchfetts bei der Quark- u. Käseherstellung, eiweißfreie M. nennt man Schottenwasser.
Nach Gerinnung und Abscheidung des Kaseins bei der Käseherstellung zurückbleibende grünl. Flüssigkeit mit wertvollen Restbestandteilen an Milchzucker und Mineralstoffen, die durch Eindampfung zu M.pulver genutzt werden.

In Scandinavia, especially Norway, whey is turned into cheese, mysost and (from goat’s whey) gjetost. The flavor of whey cheese is sweet from added brown sugar and is an acquired taste.
